「ひたし豆」ってご存知ですか？東北・信越地方の郷土料理で、青大豆を水に一晩つけてから茹で、だし汁に浸したもののこと。10年以上前に友人宅でご馳走になって以来、豆好きの私たち夫婦はすっかりハマってしまいました。わが家では、硬めに茹でてだしにつけずにおかかと醤油をかけておつまみとして食べています。枝豆と同じ感覚。食感が良くて、一度食べ出すと箸が止まりません。日持ちもするので副菜としても重宝します。まだ食べたことがないという方は、乾物コーナーで見かけたらぜひ手にとってみてください！
材料
- ひたし豆 1袋
- 生姜 1かけ
- 塩 小さじ1
- 鰹節 適量（小鉢1つにつき1つかみくらい）
- 醤油 適量（小鉢1つにつき1回しくらい）
使った道具
- 大きめのボウル＆ざる
- 包丁＆まな板
- 大きめの鍋
- 計量スプーン
- 菜箸
作り方
❶ひたし豆を軽く洗い、たっぷりの水（分量外）に1晩浸す。
まん丸だった豆が水で戻ってだいぶふっくらしました。
❷鍋に戻した水ごと豆を入れ、皮を剥いて薄切りにした生姜・塩小さじ1を加えて火にかける。
❸沸騰したらアクが出てくるので取り除き、5分ほど茹でる。
※茹で加減はお好みで。渋さがなくなり、「硬い枝豆」くらいになったらOK。
❹茹で上がったらざるに上げて粗熱を取る。
❺ボウルに食べたい分だけ豆を取り、鰹節（小鉢1つにつき1つかみくらい）・醤油（小鉢1つにつき1回しくらい）を加えて混ぜてできあがり。
ポリポリと食感が良く、サラダ感覚でいくらでも食べられます。おかかと醤油でシンプルに。それがおいしいです。残りはだし汁に浸したり、数の子と和えるのもおすすめ。
塩茹でにしてあるので、冷蔵庫で5〜7日ほど日持ちします。おつまみや副菜、お弁当のおかずにも◎
