「アスパラの卵とじ」の材料
- アスパラ 5本
- 卵 1個
- 野菜だし 1パック（コンソメで代用可）
- 塩 少々
- 黒胡椒 少々
- バター 少々

「アスパラの卵とじ」の作り方
❶茅乃舎の野菜だし1パックを400mlの水で煮る。沸騰したら2〜3分煮出してだしパックを取り出す。
❷アスパラは根元から半分くらいをピーラーで皮剥きし、斜め2〜3㎝に切る。
❸小鍋にアスパラの穂先以外の部分と❶のだしを100ml分入れ、火にかける。
❹2〜3分煮たら、アスパラの穂先の部分、塩少々（3〜5振りくらい）、黒胡椒少々（3振りくらい）を加えてさらに煮る。
❺バターを1かけら加えて溶かす。
❻卵1つを割って入れ、蓋をして蒸らす。
❼白身が固まったらできあがり。
決壊する卵黄！トロトロです。スプーンですくっておいしいスープと一緒に卵を絡ませていただきます。
旬のアスパラは風味が豊かなので、味付けは控えめにしています。塩加減は「スープとして飲むのは少し濃いかな？」くらい。卵と絡んだ時にちょうどいい塩梅になります。野菜だしを多めに入れてスープとして食べてもおいしいかと思います。
野菜だしはなければコンソメで代用してみてください。コンソメは少量にとどめて、旬のアスパラの味わいをぜひ楽しんでみてください！

化学調味料・保存料無添加なのもうれしいですね。作られた感じではなく、自然の野菜のうまみを凝縮したというのがよくわかる味わいです。コンソメを使うともろ「コンソメ味」になってしまうのですが（それがおいしい時もある）、こちらは使う素材のおいしさを引き立ててくれるように思います。
「野菜だし」はこのほかにも、カレースープなどのお料理にも使えるようです。そしてだしとしてだけでなく、袋を破ってチキンナゲットやグラタン、チャーハン、フライの味付けにも使えるという優れもの。いつも鶏ガラだしで味付けしているわが家のチャーハン。今度はこちらの野菜だしで作ってみようかな。お料理の幅が広がる。楽しみです！
