春と味が旬の「浅葱（あさつき）」。万能ねぎや分葱（わけぎ）よりも色が浅く、辛味が強いのが特徴。新潟の実家ではそのまま味噌をつけて、おつまみに食べたりしていました。その浅葱をスーパーで発見したので、嬉しくなって購入。今回は薬味やぬた（酢味噌和え）でいただきました。和からしをプラスして、爽やかな辛さを楽しみます。完全に日本酒泥棒です。
「あさつきのぬた」の材料
- あさつき 200g
- 味噌 大さじ2
- 酢 大さじ1
- 砂糖 小さじ1
- 和からし 小さじ1
「あさつきのぬた」の作り方
❶浅葱をサッと洗い、根元の固い部分を包丁で落とし、5㎝程に切る。
※根元から茹でていくので、ボウルで分けておくとやりやすいです。
❷鍋に湯を沸かし、根元の部分から入れて1分茹でる。
❸中間部分を加えてさらに1分茹でる。
❹葉先の部分を加えて30秒ほどサッと茹でる。
❺ざるにあげて水気を切る。
❻ボウルで味噌大さじ2、酢大さじ2、砂糖小さじ1、からし小さじ1を混ぜ合わせる。
❼作ったタレと浅葱を和えてできあがり。
できたては辛味が引き立ちます。
一晩冷蔵庫で寝かせたのがこちら。辛味と酸味のバランスが良く、ほんのり甘みも感じます。根元のザクザク食感と、葉先のシャクシャク食感と。歯ごたえがいいです！おいしい！
酢味噌のタレはわかりやすい分量で作りましたが、あさつきの量に合わせて調節してみてください。タレが少し多めだったので、茹でたしめじなどを加えてもおいしいかと思います。私はタレ多めでお酒＆ごはんに合わせるのが好きです。お好みでどうぞ。
