いくらは醤油漬けより塩漬け派、酒飲み母さんfj（@sake_mama）です。
お正月料理の定番「なます」。大根と人参を細切りにした紅白なますが一般的かと思います。新潟の実家や親戚の家では、大根おろしで作ったなますが登場していました。甘さ控えめで、さっぱりといただける。火を通しているのでお腹にも優しい。いくらをのせれば立派なおつまみに。実は万能なメニューなんです。

「おろしなます」と材料と分量
珍しく計量しました。1日で食べ切るなら半量でいいかと思います。
- 大根 おろした状態で400g
- 酢 大さじ4
- 酒 大さじ2
- 砂糖 小さじ2
- 塩 1つまみ
「おろしなます」の作り方
ほかに、塩辛や酒盗など、味が濃い目のものがよく合います。うずらの卵を割って、醤油をかけてもいいおつまみに。口の中がさっぱりするので、濃い味のおかずを食べた後や、お酒を変えたい時のお口直しにもぴったり。コレを傍らに置いて飲む日本酒はたまりません。
「おろしなます」のアレンジメニュー
【うち豆のおろしなます】
北陸地方でよく食べられている「うち豆」。青豆を乾燥させて潰した乾物を、別鍋で茹でておろしなますに合わせます。
滑らかなおろしのなますに、食べ応えのある豆の食感が加わってまた乙。箸休めにちょうど良い一品です。胃もたれ防止にも良い気がします。酒飲みの味方。
当ブログで何度か登場している「うち豆」。わが家の食卓になくてはならい食材で、週に一度は大根とともに味噌汁に入れます。煮物に入れても良し。残念ながら関東ではあまり見かけません。新潟食材が豊富な御徒町のスーパー「吉池」では毎回のように陳列されています。お近くの方はぜひ一度手にとってみてください。
