とうもろこしの旬の季節がやってきました。シンプルに材料1つで炊き込んでも十分おいしいのですが、焼いたベーコンを加えておつまみにもなる一品に仕上げました。野菜＋タンパク質が一度に摂れる、満足度の高いごはんです。
「とうもろこしとベーコンの炊き込みごはん」の材料
- 米 3合
- とうもろこし 1本
- ブロックベーコン 150g
- 酒 大さじ1
- 塩 小さじ1
- 水 メモリまで
- バター 小さじ1と1/2
「とうもろこしとベーコンの炊き込みごはん」に使った道具
- 包丁＆まな板
- ボウル＆ざる
- ナイフ（とうもろこしを削ぐ用） ※包丁でも構いません
- 炊飯用の鍋 or 炊飯器
- 計量スプーン
今回はとうもろこしを削ぐ時にナイフと包丁を使ったのですが、「とうもろこしカッター」なるものがあると知り、ほしくなっています。キレイに取れたら絶対に気持ちがいいと思うのです。信頼の燕三条（新潟）ブランドのものを購入しようか検討中です。
「とうもろこしとベーコンの炊き込みごはん」の作り方
【下準備】米3合を研いでざるに上げておく。
❶ブロックベーコンを1cm角に切り、油をひかずにフライパンで焼き色が付くまで焼く。
❷とうもろこしの皮と髭を取り、ナイフや包丁で身を削ぐ。芯は2等分に切っておく。
❸鍋（炊飯器）に❶の米を入れ、酒大さじ1・塩小さじ1を加え、いつもの分量まで加水する。
❹ベーコン、とうもろこしの順に加え、とうもろこしの芯も入れていつも通りに炊飯する。
※この時、ベーコンから出た脂も少し加えます。
❺炊き上がったらとうもろこしの芯を取り除き、ざっくり混ぜる。
❻バター小さじ1と1/2を加えて混ぜ、10分ほど蒸らしてできあがり。
おこげが食欲をそそります。
さっくりピラフのような炊き加減です。ベーコンを事前に炒めることで、香ばしさをプラスします。とうもろこしの芯を一緒に入れて炊くと、甘さが際立つ仕上がりに。とうもろこしの甘さとベーコンの塩気で、いくらでも食べられそう。ワインのおともにするなら、粉チーズやパセリをふりかけても◎
わが家では多忙な夫が会社で夜食として食べる用に、しばしば炊き込みごはんを作っています。野菜とタンパク質で、少しでも栄養バランスが良くなるよう…。お休みの日の昼ごはんなんかにもいいですね♪

炊き込みごはんに粉チーズをふりかけて、簡単ワンプレートおつまみに。
そら豆とアスパラのガーリックソテー、タコとブロッコリーのバジルサラダ（コンビニ惣菜）、生ハム、黒オリーブ、ミニトマトを添えました。
よく冷えたシャブリで乾杯！ワインが進みましたよー！
