❶筍の土をたわしで洗い流し、穂先を斜めにカットして包丁で両面に切り込みを入れる。
❷筍2本（1kg）に対して米ぬか1カップと鷹の爪1本を入れ、筍がかぶるまで水を入れる。
❸鍋を火にかけて沸騰したら落し蓋をして1〜1時間半茹でる。
※落し蓋がなければキッチンペーパーでもOK。
※途中で水が少なくなったら追加します。
❹ゆで上がったらそのまま冷まし、7〜8時間寝かせる。
※粗熱が取れたら冷蔵庫へ。
「牛肉と筍のオイスター炒め」の作り方
❶下ゆでした筍の皮を剥き、横半分に切ってから1㎝幅くらいの拍子切りにする。
❷木耳は5分ほど熱湯で戻し、1㎝くらいの角切りにする。
❸牛肉は幅2㎝くらいに切る。
❹フライパンにごま油大さじ1/2をひき、牛肉を炒める。
❺牛肉に9割ほど火が通ったら、筍、木耳を加えて炒める。
❻酒大さじ1、鶏がら顆粒だし大さじ1/2、オイスターソース大さじ2と1/2、みりん大さじ2を加えて炒める。
❼最後に香りづけの醤油小さじ1を加えてサッと炒めてできあがり。
筍のシャキシャキ食感、木耳のコリコリ食感を楽しめます。米ぬかで下ゆでした筍は、コーンのように甘い香り。「いつも食べている水煮と全然違う！」と驚かされます。牛肉の甘い脂、オイスターソースのコクのある風味と絡んで絶品！ついつい箸が進むおいしさです。お酒はこれまたコクのあるビールを合わせたいです。
